I bought your California Heriloom Peeled Garlic from Costco. It is a fairly large bag and the exp date says 12/3/11 Can I freeze some of the garlic? I know I won’t be using the whole bag by 12/3/11

You didn’t answer the question of the previous writer. I would like to know the answer to this also. Probably would be best to roast it if it looks like it is getting old, and then freeze the pulp.
Is your garlic soft neck or hard neck? I got mine at Costco also. Am I correct in assuming that it is not organic?
Hi Dianne: Our garlic is the soft neck variety. We grow both organic and conventional garlic but our organic is clearly marked with the word organic in the logo and on the bag. Our conventional garlic is grown using Good Agricultural Practices (GAP) and is certified Pesticide Residue Free by Nutriclean. Our organic garlic is farmed following all Federal and State laws as well as Good Agricultural Practices and California Certified Organic Farmers (CCOF) organic standards.
Just a follow on to the above, do you irradiate any of your fresh garlic? I have a bag of your bulbs here and I see no sign of green life in the center and was wanting to get the story straight from you. I have been told that irradiation is quite common to increase shelf life.
